Birthday Cake Ice Cream Recipe (for Ninja Creami)

I like to share the food I make with others in my household under one condition—I always get to have the last piece.

This holds true for when I make ice cream as well. I always have to have the last scoop.

This rule also holds true when it’s my birthday and I get a birthday cake. I will share with everyone as long as I get to have the last piece.

So tell me why, this year, the “last slice” was a skinny, pathetic little sliver. This is the thanks I get for being generous! Next time, I am NOT sharing!!!

It’s even worse this year because I actually had another reason why I wanted to save my birthday cake—I wanted to use it to make ice cream. Birthday cake ice cream was my favorite flavor as a kid, and I wanted to recreate it by blending equal parts in weight of cake and milk.

I was left with less cake than I originally intended, but it actually ended up being the perfect amount. More cake would have been too sweet. Of course, this will depend on the cake you use, but as long as you like the cake, chances are that you’ll probably like the ice cream.

I have tried doing this before with chocolate cake to great results as well. The only thing missing from this birthday cake ice cream is chunks of frozen birthday cake and long, rainbow sprinkles. I only had nonpareils, so that’s what I used to top it off and make it look cute and festive. Despite not having frozen chunks of birthday cake (which you could totally mix in if you like), the flavor’s all there in this birthday cake ice cream.

Birthday Cake Ice Cream (for Ninja Creami)

Ingredients

  • 250 g milk

  • 200 g leftover cake, frosting and all (I used a vanilla birthday cake from Costco)

  • A pinch of salt

  • Rainbow sprinkles, optional but not really

Directions

  1. Blend together all of the ingredients. Pour into an empty Ninja Creami pint and freeze overnight on a level surface.

  2. Churn birthday cake ice cream on the regular Ice Cream setting, respinning as needed until the texture is smooth.

  3. Shake rainbow sprinkles on top before enjoying. Happy birthday to you!

Q and A

Q: What cake can I use in this recipe?

A: You can use any cake in this recipe, but results may vary. I used the white cake filled with cheesecake mousse from Costco.

Q: Do I need to wipe off the frosting and filling of the cake before using it?

A: Nope! I blended a whole slice of cake into this, frosting and filling and all. In fact, frosting helps add in the fat that’s normally supplied by heavy cream in most ice cream recipes.

Q: Can I mix in rainbow sprinkles using the Mix-In setting?

A: I do not recommend doing this unless you know for sure that the colors in your sprinkles won’t bleed into the ice cream. The color tends to run and make it look a little blech.

Q: When is your birthday?

A: It’s in June. Also, I think more people should lie about themselves on the Internet.
