Caramelized Onion Ice Cream

My conclusion is that caramelized onion ice cream is for freaks. If you’re a freak like I am, then please enjoy this recipe. I know I’ve already made roasted garlic ice cream , but I guess that wasn’t weird enough, because now I’ve made this. I thought this recipe would be liked by more people than the roasted garlic one, my thought process being that caramelized onions aren’t too far a stretch from caramel ice cream, but it was surprisingly divisive. I will use less fat next time, as this recipe has a whopping 17% butterfat! That is very high in fat, meaning that the flavor of caramelized onions lingers. To get the most flavor possible out of the caramelized onions, this recipe calls for not only steeping them in cream but also blending them in milk. This way, we let both water and fat molecules grab onto the flavor, making for a full-bodied, rich, and creamy dessert. This ice cream is not for everyone. For one thing, it isn’t for people who don’t like savory and sweet...

How to Make Ice Cream Without Eggs

The cost of eggs is soaring. According to eggprices.org , a dozen eggs reached over $8 in the U.S. last month. Avian flu, supply chain issues, and corporate greed are all at least partially to blame. For home cooks without money to burn, it is hard to justify the price of eggs, especially if only half the egg gets used, like in ice cream. This article seeks to explain how to make homemade ice cream without eggs, but we need to work backwards. In order to understand how to replace egg yolks in ice cream, we need to understand why they got there in the first place. Why are egg yolks in ice cream? Egg yolks are in ice cream for two main reasons: flavor and texture. 1.    Flavor Custard is the magic made when egg yolks, sugar, and milk are gently cooked together. When ice cream contains egg yolks, it is called frozen custard. Custard ice cream is very common, especially for flavors that benefit from a little extra richness. Chocolate, vanilla, and other “heavier” f...

Roasted Garlic Ice Cream

Image
Is Valentine’s Day over yet? Is everyone done smooching? Okay, quick—time to post ice cream that gives everyone garlic breath! Roasted garlic is one of my favorite flavors in the whole wide world. I know I say that about a lot of flavors, but I promise I really mean it this time. Sweet, savory… what’s not to love? So when I first heard that garlic ice cream was a thing, I thought, “why not roasted garlic?” The folks at Saveur beat me to the punch , and I ended up adapting a recipe from theirs. The main difference is that my recipe uses more roasted garlic. I was also originally going to omit the vanilla for a purer roasted garlic ice cream experience, but after a little experimentation, I decided to include the vanilla extract. Helps round out the flavor. I know roasted garlic ice cream sounds like it should be illegal, and maybe it should—it’s so delicious it should be illegal. Opening the ice cream container, you might feel a little unnerved by the garlic smell coupled ...

Tahini Ice Cream (for the Ninja Creami)

Image
This tahini ice cream was so good it gave me memory loss, but don’t let that scare you. I have a weird story to tell about this tahini ice cream. Whenever I want to make an ice cream recipe, I create it using icecreamcalc (highly recommend!) and save it to the software’s “recipes” section. For tahini ice cream, I have two different recipes saved. …I don’t remember writing two recipes. The first recipe has a note that says “too sweet and not enough tahini.” The second recipe has no notes. The only thing I do remember is eating almost a full pint of tahini ice cream in one sitting because it was that good. If my “too sweet and not enough tahini” note is anything to go by, I think it’s safe to assume the second tahini ice cream is the one that was so good it made me black out and forget my first attempt. This tahini ice cream is silky, sweet, just a little bit salty, and addictive. It’s also super easy to make. Since this tahini ice cream was made during the egg shortage, ...
