1 Ingredient Eggnog Ice Cream (for Ninja Creami)

For how dead simple it is to make, it’s well worth it.

How am I supposed to know when it’s the right time to throw away holiday leftovers? Right now, it’s the end of January, and as of about a week ago, I still had opened, storebought eggnog in the fridge from December. Is that fine, or… am I… gross?

My political view is that if it smells fine, looks fine, and tastes fine, then it’s fine. This is the capaign I’ll be running on. Please pledge your support for me in the next general election.

Anyways, this is an extremely easy, one-ingredient recipe you can try if you, like me, have leftover eggnog you haven’t yet thrown out. Pour eggnog into a Ninja Creami pint up to the maximum fill line, stir in two tablespoons of dark rum (optional, but strongly recommended), and voila. Done. That’s all you need to make this.

You can also add crunchy cookies as a mix-in if you’d like, but keep in mind that they won’t stay crunchy the longer they sit. I enjoyed adding speculoos cookies (Biscoff) for some textural variation. I added ¼ cup of cookie crumbles.

This eggnog ice cream has turned out icy before, but it has also turned out smooth. I’m not sure why. Maybe it depends on how much alcohol I added and whether or not I added mix-ins. Regardless, I still enjoyed it even when it was icy. For how dead simple it is to make, it’s well worth it.

1 Ingredient Eggnog Ice Cream Recipe

Ingredients

  • 2 cups (around 500 g) eggnog

  • 2 tablespoons (30 g) dark rum (optional)

  • Up to ¼ cup crumbled speculoos cookies (optional)

Directions

1. Pour eggnog into a clean, empty Ninja Creami pint. Mix in the rum if using. Freeze overnight.

2. If you used rum, churn on the regular Ice Cream setting and respin as needed to reach a creamy consistency. If you didn’t use rum, churn on the Lite Ice Cream setting.

3. If adding cookies, dig a hole into the ice cream about 1.5 inches in diameter going all the way down into the center of the pint. Fill the hole with cookie crumbles, then use the Mix-In function. Enjoy!

Q and A

Q: What happens if I omit the rum?

A: Your eggnog won’t be as scoopable right out of the freezer. Also, you’ll be missing the flavor and aroma of rum.

Q: Can I use homemade eggnog, or does this only work for storebought?

A: I have only used storebought so far, but homemade should work just as well.

Q: What should I serve with eggnog ice cream?

A: Biscoff cookies are having a much-deserved moment, and their spice flavor goes very well with eggnog ice cream. Gingerbread cookies would also be delightful and make for some excellent ice cream sandwiches.

Q: How can I tell if my eggnog is expired?

A: I live life on the wild side and trust that my senses will tell me if something is safe to eat. Please don’t let me be the reason you get sick, though! When in doubt, throw it out. Also, if you get sick, please don’t sue me.
